Chinese Chow Mein Recipe

Turn an everyday Chinese dish like Chow Mein into a homemade favorite! Chow Mein has an easy to follow recipe that allows you to make variations with ease. This recipe can serve on Chinese New Year.
This recipe serves 4 to 6.

  • 8 ounces thin spaghetti
  • 4 teaspoons olive oil
  • 1 small onion, thinly sliced
  • 1 1/2 teaspoons minced garlic
  • 1/4 teaspoon ground ginger
  • 1 1/2 teaspoons Five Spice Powder
  • 1/3 cup broccoli florets
  • 1/4 cup carrots, sliced
  • 1/4 cup snap peas
  • 1/4 cup sliced Shiitake mushrooms
  • 2 cups chicken, cooked and diced
  • 1/2 - 1 cup chicken stock
  • 1 tablespoon soy sauce

Cooking Directions: 
  1. Bring pot of water to boil and cook noodles for 8 to 10 minutes or until al dente.
  2. Drain and set noodles aside.
  3. While noodles are boiling, heat 2 teaspoons olive oil in large skillet and add sliced onions and minced garlic.
  4. Sauté 1 to 2 minutes.
  5. In same skillet, add ground ginger, Five Spice powder, broccoli florets, sliced carrots, snap peas and sliced Shiitake mushrooms.
  6. Sauté 3 to 4 more minutes.
  7. Add noodles, continuing to stir until well blended.
  8. Add chicken stock and diced chicken.
  9. Stir constantly for 2 to 3 minutes over medium heat.
  10. Remove from heat. Stir in soy sauce, and serve.
